Optimized for 8 Dough Balls: The tray is purpose-designed to accommodate exactly 8 standard pizza dough balls (approx. 200–280 g each), providing individual space for each portion to proof evenly without touching.

Perfect Proofing Depth: With an internal depth of approximately 65 mm, the 72 mm overall height gives dough balls ample room to rise. When stacked with other trays or lids, the top of the dough remains protected from contact, preserving the round shape.

Smooth, Non-Stick Interior: The bottom and inner walls are completely smooth and non-porous, reducing the chance of dough sticking. A light dusting of flour or semolina is sufficient; the surface also allows for easy hand-release without damaging the dough.

Standard Bakery Rack Compatibility: The 600 × 400 mm footprint fits perfectly into standard European bakery racks, retarder-proofer cabinets, and transport trolleys, making integration into your existing pizza production line seamless.

Hygienic & Temperature Ready: Made from 100% virgin food grade PP, BPA-free and odorless. The trays can handle temperatures from -20°C to +80°C, so they can move directly from a cold retarder at 4°C into a warm proofing room without issue. Q1: What size pizza dough ball will fit in each position?

Each of the 8 positions can comfortably hold a dough ball up to approximately 130 mm in diameter once flattened slightly, corresponding to dough weights between 200 g and 280 g. For classic Neapolitan-style dough balls (around 250 g), the spacing is ideal.

Q2: Are lids included with these proofing trays?

Lids are not included as a standard component. However, the trays are fully stackable and can be used with a flat lid (available separately) to create a sealed, humid environment that prevents skin from forming on the dough during long proofing cycles.

Q3: Will the dough stick to the tray, and should I oil or flour it?

The PP surface has natural non-stick properties. For most doughs, a light dusting of flour or semolina is sufficient. Oiling is not required but can be used for very high-hydration doughs. The smooth surface also makes clean release easy without tearing the dough.

Q4: How many fully loaded trays can be stacked safely?

The trays feature an interlocking design for stable stacking. A column of up to 8 fully loaded trays can be stacked safely when placed on a level surface and handled with care, assuming a standard dough weight per tray.

Q5: Can these trays go directly from a cold retarder into a proofer?

Yes. The food grade PP material withstands the thermal shock of moving from a refrigerated environment (down to -20°C) into a warm proofer (up to 40–50°C ambient air) without warping or cracking. For direct contact with a hot floor or heater, ensure the surface does not exceed 80°C.
